The Elastomoule Mini Canelés is specially designed for baking these famous pastries from the Bordeaux region. It achieves excellent caramelization of the Canelés, for pastries with an authentic flavour, just like traditional copper moulds. The tray features the R'System (holes) for perfect circulation of the hot air, evenly baking all the pastries. It can be used for hot preparations and cold forming alike. For baking, it can only be used in a traditional oven. Place the tray on a rack or perforated baking tray for perfect heat convection. Each tray comes with a recipe card prepared by MOFs and/or Pastry World Champions. We advise you to wash your Elastomoule mould by hand with warm water and washing-up liquid.
